Sprouts Veg Cutlet, learn how to make this super delicious and crunchy cutlet using green gram sprouts, mixed vegetables and gram flour. Serve it with tomato chili sauce or green chutney.
The recipe requires simple ingredients but the process may seem bit long. The sprouts, steamed vegetables are mixed together with Indian spice powders and besan/gram flour. For the crispiness, add aval powder or breadcrumbs. Replace potatoes with sweet potatoes or you can also add cooked and mashed channa. This is a vegan and protein rich cutlet recipe which can be had for evening snacks or for a light dinner.

Sprouts Veg Cutlet
Ingredients
- 1/2 cup Mashed Sweet Potatoes
- 1/2 cup Steamed Green Gram Sprouts
- 1/4 cup Steamed & Chopped Beans
- 1/4 cup Steamed & Chopped Carrots
- 1/4 cup Finely Chopped Onions
- 1/4 cup Finely Chopped Green Chilies optional
- 1/4 tsp Turmeric Powder
- 1/4 tsp Garam Masala
- 1/2 tsp Cumin Powder
- 1/2 tsp Pepper Powder
- 1/4 cup Chopped Mint & Coriander Leaves
- 2 tbsp Besan / Kadalai Maavu
- 1 tbsp Rice Flour
- Salt to taste
- Asofoetida - few pinch
- Groundnut Oil for frying
- Water to knead
Instructions
- Take a mixing bowl. Add all the above mentioned ingredients and little water. Knead to smooth dough. Keep aside for 10 mins.
- Heat a tava or frying pan. Add enough oil for shallow frying. Make small balls of the dough and press it lightly to form a patty. Cook till it turns golden brown on both the sides. Proceed with the remaning cutlet balls.
